Abstract

Supply chain of curly chilies from production ceoler 10 market in Indonesia are IIsually carried out at ambient temperature, lack of postharvest h:mdling method and take more than 2 days depend on lhe distance to the market. In this stud)', effect of packaging mel hod commonly used b)' the actor of supply chain of curly chilies

in Indonesia during transportation and temporal)' storage, on the quality of Cllrl)'

chilies was examined. Sample of Il3ckaging materials were plastic net, plastic sack and

vClililatcd cardboard box. Sample of curly chilies were ban.'ested fromヲ。ュhセイ orchard.

After sorting, three kilogram of curly chilies were transported to the lab0l'3tory in 5 hours and stored at ambient t.. mperature condition. Chang.. in weight loss, firmness,

color, \itaminCand \>lsual appuranc(' were measured during storage pt'riod. Among

the packaging materials, the longcst posthan'cst life obsen'ed for curly chilies packed in ventil:ued cardboard box. Tbe damage of curly chilies was found at days 13, 7 and 5 for ventilated cardboard box, plastic sack and plastic Ilet, respectively. There were no significant differences for changes in lirmn('ss, color and vitamin C of curly chilies

among the packaging materialsup to

N'TRODUcnON

Supply chain of chilies in tropical developing country are generally indicated by bulky transportation packaging, lack of postharvest handling, high postharvest losses and involves many supply chain actors. Supply chain of chilies from the production center to !he markel in Indonesia are usually carried Out at ambient tempermure, lack of postharvest

handling and take aOOot2 days dep<.'nd on the distancetothe market. Sometimes, chilies have

tobetransponed by ship to other island and this needs more than 2 days for Iransportalion.

This is one of the reasons why postharvest losses offTesh agriculnrral products arc still high

In Indonesia. Our study in the chilies production center in West Java showed that during

harvesting, transponation, sorting and temporary storage, postharvest losses wcre vary fTom

セPNR 10 22.6% (purwanlO el al., 2012). Many studies relatcd on the postharvest ofchilies \\ ere

,:arried out by some researchers (Lownds et aI., 1994; Krajayklang et al., 2000; Nyanjage et :;1 .•2005; Kan el al., 2007; Tano et al., 2008; Rahman et al., 2012). Tanoel al. (2008) reported that temperature at 6°C was suitable for chilies storage condition. Lower weight loss occurred for chilies stored under lower temperature storage (Lownds et aI., 1994; Tano et aI., 20015)

Supply chain aetivilies fOT chilics in Indonesia generally are carried out as follows: in .:asc offrce market, fanners market their chilies to small-scale collectors around their villages, :::rge-scalc collectors, or directly to wholesale markets. The small·scale collectors collect any horticultural products required by markcts. Tllese include chilies, potatoes, cabbages, leeks. elC. The collectors have two ways to gather chilies from the fanners, i.e. they directly collect

エィセ chilies from the field orエィセ farmcl"j deliver their chilies to the collector's location. Every packed is 40 to 60 kg. .-\cti\-ities conducted by small-scale collectors val)' depends on thc

market conditions.tィセ collectors only pedann repacking and deliver the repacked products

to large-scale collectors if the demand and the price are high. When the chilies price is low

and the production decreases, the collectors sort and temporarily stored thechilies to obtain

an economical quantity before transporting the chilies to the market.

Posthan.-est acti"ities carried out by large-scale collectors arc sorting and repacking.

Sorting is」ッョ、オ・hセ、 to separate unhcalthy, rollen and overripe chilies from the good ones.

Large-scale collectors deliver chilies to wholesale markets. Loading and unloading activilies could degrade chilies quality because plastic sacks that usually used to pack the chilies are flexible. 1l1erelorc. they cannot stand impacts that may happen. In addition. the sacks are usually ordered und placed on the floor by slamming them down. This caUSes mechanical injury of the chilies, especially at the bottom part. TradersJlarge-scale collct10rs pcrform supply chain activities for other islands; therefore, they are also thc actors in inter-island

markets.. This resultsinthe same purchasing price between a<:lors of inler-island markets and

at large-scale collectors. Howcver,ahigher selling price occurs because of high operational

costs, such as shipping cost.

Pl'lckaging method is still the main problem during transportation and temporary

storage. famlcr usually pack in the capacity range of40to60kg in plastic sack, plastic nct

or recycle cardboard. There is no standard for packaging in the famler level. This

will

result

both qualitmive and quantitative losses during transponation and tempor31y storage. Proper packaging method is expected to reduce postharyest losses and to extend postharvCSl life. In this study, the effect ofpackaging method for curly chilics commonly used by the actor during transportation and temporal}' storage in Indonesia. on the postharvest losses was examined.

MATERJA L AND METHODS

S:lmple Preparation

Curly chilies, local cultivar of Hibrida TM

Procedure

Three kilogram ofsample ofcurly chilies were packed into plastic net of35x55em,

plastic sack of 45

cm. Chilies was then transportedtothe laboratol)' in the

night time during 5 h at ambient temperature. This tmnsp0l1ation time was Ihe same

time needed 10 bring thc chilies from production center to the market in Jakarta city. Aftcr

transporting to Ihe laboratory, the sample ofchilies

was

then place in the ambient temperature.

We simulated this as tempomry storage for chilies before delivering[0the consumer. During

temporal}' storage, the change in weight loss, finnness, color, vitamin C and visual appearance

of sample were monitored. Surface color ofsample was measured

as

reflected color(L*a*b*)

using a Colorimeler model CR·300 (Minolta. Osaka·Japan). Three replications were carried out for all experiment conditions,
