Penelitian ini bertujuan untuk mengetahui pengaruh karakteristik permen susu (karamel) meliputi aspek organoleptik dan uji kadar air dan gula total di laboratorium ilmu teknologi pangan yang dilaksanakan pada bulan mei sampai juni 2017. Metode penelitian ini menggunakan rancangan acak lengkap yang terdiri dari lima perlakuan dan empat ulangan yaitu P0; control, P1; 5%, P2; 10%, P3; 15% dan P4; 20% daun kelor dengan jumlah 15 panelis agak terlatih. Variabel yang diukur meliputi warna, aroma, tekstur, rasa, kesukaan.
Hasil penelitian menunjukkan bahwa perlakuan tidak memberikan pengaruh nyata terhadap warna (4,35%), aroma (3,84%), tekstur (3,78%), rasa (3,38%), kesukaan (3,66%). Tingkat kesukaan tertinggi terdapat pada permen karamel P0 sebesar 4,23%. Pengolahan susu menjadi permen karamel dapat meningkatkan kualitas produk karamel susu namun pada penggunaan daun kelor dapat menurunkan presentase tingkat kesukaan penelis dibandingkan dengan permen karamel susu tanpa penambahan daun kelor.

ARISTA PAMEL, 2017: Use Of Leaves Moringa (Moringa oleifera Lamk) On Caramel Candy Making Of Goat Milk. Under supervised by R. Edhy Mirwandhono and Yunilas.
This study aims to determine the effect of milk candy characteristic (caramel) covering organoleptic aspect and test of total water and sugar content in Food Science Technology Laboratory which conducted from May to June 2017. This research method uses a complete randomized design consisting of five treatments and four Repeat P0; Control, P1; 5%, P2; 10%, P3; 15% and P4; 20% of Moringa leaves with a total of 15 rather skilled panelists. Measurable variables include color, aroma, texture, taste, joy.
The results showed that the treatment did not give significant effect on the color (4.35%), aroma (3.84%), texture (3.78%), flavor (3.38%), favorite (3.66%). The highest level of delight is found in caramel candy P0 of 4.23%. Processing milk into caramel candy can improve the quality of milk caramel products but on the use of moringa leaves can reduce the percentage of the level of anxiety preference compared with milk caramel candy without the addition of moringa leaves.
