ABSTRACT
ANALYZING OF CHINESE CULTURE IN INFLUENCING CULINARY IN TANGERANG

Tangerang is a city located in the province of Banten, Java, Indonesia, right to the west of Jakarta. Tangerang is a city the third-largest in the Jabotabek after Jakarta and Bekasi. Benteng Chinese is one of the famous ethnic Chinese groups in Indonesia and they have a unique culture and cuisine.
The purpose of this research is to know the influencing of Chinese culture through cuisine in North Tangerang and various factors that support acculturation through cuisine in Tangerang. The research method used qualitative research. It was supported with primary data from interview and secondary data from journals, books, and other sources.
Results of the research shows that typical Tangerang food was affected the Chinese culture and had several supportive factors existence of acculturation and assimilation between the Chinese culture and the local culture. Like the social factor, religious,
