Artikel ini memiliki unsur yang lengkap (Abstract, Introduction, Method, Results & Discussion, Conclusion, Refreneces). State of the art dan tujuan dinyatakan dengan jelas. Penulisan daftar pustaka dan in-text citation konsisten dan sesuai dengan petunjuk penulisan. Hasil eek plagiarisme dengan Turnitin menunjukkan kesamaan sebesar 20%. ➔ (nilai = 10%)

Penelitian/artikel ini mempelajari pengaruh konsentrasi inokulum lactobacillus plantarrum, konsentrasi tepung gadung, serta waktu pada proses fermentasi tepung gadung. Indikator yang diobservasi adalah perubahan gugus fungsional nutrisi tepung gadung.

Beberapa nutrisi penting mengalami penurunan antara lain karbohidrat, protein, dan serat akibat proses fermentasi. Perubahan gugus fungsi dan berat molekul ini menyebabkan sifat fisik dan kimia dari tepung gadung juga mengalami perubahan antara lain swelling power dan kelarutan yang lebih rendah dari tepung aslinya Di samping itu, konsentrasi amilose dan gugus karboksil mengalami peningkatan. Hasil fermentasi ini memungkinkan tepung gadung dapat lebih luas digunakan terutama untuk produk snack dan juga bakery. Pembahasan dalam artikel ini sangat mendalam dan komprehensif dimana ada sejumlah 25 referensi yang dicitasi atau 55,6%

dari daftar pustaka yang ada. ➔ (nilai = 30%)

Novelty artikel termasuk tinggi, dan memiliki keunikan dengan bahan baku gadung. Referensi yang dicitasi dalam artikel ini ada 45, dengan 24 (53,3%) diantaranya adalah baru (10 tahun terakhir). This work aims to examine the influence of flour concentrations (5%--25% w/v), inoculum loading (2.5%-15% v/v), and fermentation time (0-144 h) on the nutritional and functional properties of gadung (Dioscorea hispida Dennst) tuber flour. The flour was microbiologically treated through facultative submerged fermentation using Lactobacillus plantarum. The carbohydrate, lipid, protein, fiber and ash contents were reduced by fermentation, while moisture content was increased. In general, the swelling power and the solubility of fermented flour were below those of the native flour. Carboxyl group content increased with fermentation time, whereas no clear trend was found for carbonyl group. The amylose content of the fermented flour was larger than that of the native flour, which most probably was due to the depolymerization of amylopectin branches to form new amylase-like molecules. The best fermentation conditions were flour concentration of 1o% (w/v), inoculum loading of 5% (/v), and fermentation for 48 h. ²⁰²⁰
