IDENTIFICATION OF ACTIVE COMPOUNDS IN RED ONION (Allium ascalonicum L.) PEEL EXTRACT BY LC-ESI-QTOF-MS/MS AND DETERMINATION OF ITS ANTIOXIDANT ACTIVITY

So this study was conducted to determine the compounds in the red onion peel that acts as antioxidants. It was found that the natural antioxidant of onion peel extract showed good primary oxidation inhibition ability.

Red peel onion is one of the foodstuffs that are often used by people in daily life, but their use is limited to the onion bulbs so that 10% of red onion cannot be consumed and only becomes waste, namely the peel of the red onion. Although the peel of the onion is a waste, the peel of the onion contains flavonol compounds from the flavonoid group that has the potential as antioxidants.

The extraction method used in this research is the maceration method with 80% ethanol solvent. The compound content test was carried out by testing phytochemical compounds by identifying flavonoid compounds, polyphenols, steroids and terpenoids, saponins, alkaloids, anthocyanins, antioxidant activity, and identification of compounds using LC-ESI-QTOF-MS/MS.

Meanwhile, the identification of compound content of onion peel extract using LC- ESI-QTOF- MS/MS detected flavonoids (14 compounds), polyphenols (2 compound), saponins (2 compounds), and alkaloids (1 compound).

Tujuan penelitian : Maka penelitian ini dilakukan untuk mengetahui senyawa pada kulit bawang merah yang berperan sebagai antioksidan. Bahwa antioksidan alami ekstrak kulit bawang merah menunjukkan kemampuan penghambatan oksidasi primer yang baik. It was found that the natural antioxidant of onion peel extract showed good primary oxidation inhibition ability) Kajian pustaka : Bawang kulit merah merupakan salah satu bahan pangan yang sering dimanfaatkan masyarakat dalam kehidupan sehari-hari, namun pemanfaatannya hanya terbatas pada umbi bawang merah saja sehingga 10% dari bawang merah tersebut tidak dapat dikonsumsi dan hanya menjadi limbah yaitu kulit bawang merah. Meskipun kulit bawang merah merupakan limbah, namun kulit bawang merah mengandung senyawa flavonol dari golongan flavonoid yang berpotensi sebagai antioksidan. Metode penelitian : Metode ekstraksi yang digunakan pada penelitian ini adalah metode maserasi dengan pelarut etanol 80%. Uji kandungan senyawa dilakukan dengan pengujian senyawa fitokimia dengan mengidentifikasi senyawa flavonoid, polifenol, steroid dan terpenoid, saponin, alkaloid, antosianin, aktivitas antioksidan, dan identifikasi senyawa menggunakan LC-ESI-QTOF- MS/MS. Sedangkan identifikasi kandungan senyawa ekstrak kulit bawang merah menggunakan LC-ESI-QTOF-MS/MS terdeteksi senyawa flavonoid (14 senyawa), polifenol (2 senyawa), saponin (2 senyawa), dan alkaloid (1 senyawa).
