EXECUTIVE SUMMARY
The Author has completed her internship program for 3 month at Apéritif restaurant Ubud, Bali. This report is based on 3 months internship experience. At that time the author had the opportunity to apply his knowledge from institute and develop her skills in the real kitchen life.
Apéritif Restaurant and Bar is a Fine Dining restaurant located in Ubud, Gianyar, Bali. The Restaurant itself is comes with eclectic cuisine wrapped in 1920s concept. The author has taught work in the kitchen and service sequence for fine dining restaurant with eclectic food concept. The author has experienced in fish section and cold kitchen section, the author has learned how to prepare dishes, handle ingredients, make a market list, work list, order service, and plating for many dish.
