Abstract

Over the past decades, the number of childhood obesity cases has increased significantly, which led to an increase in the number of adults suffering from degenerative diseases such as diabetes mellitus (DM). Glucomannan-Enriched Soy Milk Ice Cream (GSMIC) may prevent obesity in children. The aim of the study was to test the level of

carbohydrates, protein, fat, dietary fiber, glycemic index, glycemic load, and organoleptic quality of GSMIC. This experiment used a completely randomized design to test three formulations of glucomannan flour and soy milk (0.5%, 1.5%, and 2.5%). The products were tested for nutritional composition, and evaluated on glycemic index, glycemic load, and organoleptic quality. GSMIC 2.5% had higher levels of dietary fiber and high carbohydrate, protein, and fat content compared to ice cream (3.99%, 30.7%, 1.50%, 1.33%, respectively). The glycemic index of ice cream and 2.5% GSMIC were 75.83 (75%) and 51.48 (51%), respectively, while the glycemic load of ice cream and 2.5%

GSMIC were 9.04 and 11.61, respectively. Based on the organoleptic analysis, formulation preferred by the panellists was 2.5% glucomannan flour. Glucomannan flour affected the level of carbohydrates, protein, fat, dietary fiber, glycemic index, glycemic load, and organoleptic quality in soy milk ice cream. © 2018 Institute of Physics Publishing.

Dear All ISFA 2017 Participants,

In a few days the ISFA 2017 will commence. Therefore, we have several important announcements.

1. Please kindly find the attached rundown, including the presentation schedule for your perusal. However, we truly hope that all participants will join all the agenda that we have prepared, and not only present for your presentation turn. We expect that the program will start at 8.30 sharp, thus all participants are expected to do registration before that.

2. The committee has made the presentation schedule based on the focus and the similarity of research topic. Therefore, we cannot accommodate the request to change the schedule. Exchanging your schedule with other participant with the same focus (same room), however, is permitted. You should find the other participant by yourself, and upon agreement is made, please inform the committee.

3. We expect that presentation file and poster can be given to the committee during your registration on Day 1.

4. Certificate, and payment receipt will be given to the participants at the end of the program on Day 2.

5. In regards to travel arrangement to reach the venue, Grand Candi Hotel, please consult the map provided in our webpage. There is no public transport which will pass right in the front of the venue. It is possible to take the city bus (BRT Semarang) network and stop at Akademi Polisi (AKPOL), and walk around 1-2 km. Thus, we advise you to take application-based transportation such as Grab or Gojek instead, or simply call a taxi.

First of all, the committee would like to thank you for your participation at ISFA 2017. We hope that you enjoyed the symposium.

We are glad to inform you that we have contacted the international proceeding publisher, and they have confirmed that there is no limit for submission. Thus, we will put all abstracts under review and the succesful one will be submitted for publication at the SCOPUS-indexed proceeding.

Please be reminded: there will be an additional cost of IDR 1.5 million for the publication. Unsuccessful papers will not be charged.

As a follow up from the 2nd International Symposium on Food and Agro-biodiversity (ISFA 2017), we have successfully conducted a review for your presented paper entitled Nutritional Composition, Glycemic Index, Glycemic Load, and Organoleptic Quality of Glucomannan-Enriched Soy Milk Ice Cream.

Please find the general comment for your paper as follow:

1. Quality of English:

· High – the manuscript has been written in good English, well structured, and in accordance with academic

writing principles. However, some minor mistakes might still be found. Thus, we recommend to do proof reading with your peers especially after the revision and fix such mistakes so that the manuscript will be in perfect shape for publication.
