SUPPLEMENTAL MATERIAL: Healthy Eating Index Data Assumptions and Calculation Methods

The following assumptions and methods were used to calculate Healthy Eating Index (HEI) scores, using the 2010 HEI scoring guidelines.

USDA Day 2 Menu

Data and calculation assumptions

 Rice mixed dish is white rice (refined grain).

 Because data are missing for potato chowder (canned), popcorn (bagged), and whole wheat bread (dough): whole wheat bread (dough) = assume same monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), and food group information as whole wheat bread (packaged); potato chowder (canned) = assume same food group info as potato chowder (home), http://www.campbellsoup.com/Products/Chunky/Traditional/2433;

popcorn (bagged ) = assume same food group info as popcorn (microwave).

 Assume no added sugars in orange juice (100% juice), milk, green beans, apple, and yogurt.

JADA Menus (Baseline Through Target Menus)

The following assumptions and methods were used to calculate HEI scores, using the 2005 HEI scoring guidelines.

Data and calculation assumptions

 Added sugar from ice cream was calculated by subtracting the amount of sugar (grams) in the milk equivalent for that serving from the total amount of sugars.

Added sugars from the vanilla yogurt were calculated by finding the amount of total sugar in plain yogurt (USDA Nutrient Database;

http://ndb.nal.usda.gov/ndb/foods/show/107?fg=&man=&lfacet=&format=&count=&max=25&offset=&sort=&qlookup=yogurt%2C+plain ) and subtracting the amount of total sugars in the vanilla yogurt. The difference was considered added sugar. For the cereal product, total sugar was halved in order to estimate added sugar.

 Italian dressing added sugar was taken from the Food Value Analysis database. The total sugar listed was considered to be all added.

 All sugar in the hot fudge topping was considered to be added sugar. Saturated fat was used to calculate the solid fat for this product.

 Italian dressing “oils,” which did not have information in the Food Value Analysis database, were calculated by taking the total fat and subtracting the amount of saturated fat. The same method was used for the mayonnaise and sunflower seeds.

 Solid fat calculations: if there were data available on “discretionary fats, solids,” then these data was used; if not, saturated fat values were used instead.

If data for a food product (food group/category) were not available in the Food Value Analysis database, it was replaced with a similar product so that there were no incomplete HEI scores.

 Substitute instant iced tea for “frozen” iced tea option.

 Substitute packaged cookies info for “frozen” chocolate chip cookies

 Substitute packaged Italian dressing for “frozen” Italian dressing.
