Shutchi Catfish Jelly is used as other meat jelly products in the parties, festivals and so on. The research was conducted on an influence of meat fish (2(7%, 25%, 30% and 35%) and pig skin (8%, 11%, 14% and 17%) as well as content of agar (3%, 4%, 5% and 6%) and carrots (8%, 10%, 12% and 14%) added to the sensory value and preferred level, protein, lipid content of the product The time of preservation of this product was also investigated. Results showed that the added shutchi catfish meat was 25% (w/v), pig skin 14%, agar 5% and carrots 10% gave well-stnictured products, good colors and flavors; the sensory value was retained highly after 6 weeks of preservation under vacuum packaging condition and at S^C-lCC.
