Fruit mice containing probiotics has recently attracted inceiest of consumers. Tins study was earned out to assess the suitability of carrot juice aa raw material for the production of probiolics juice with three strama of LaetobaeHlus addopktlus HT, Lactobacillus fermintum HAG aod Bacillus elausii.

The bacteria have been sdded Io cairot juice with concentration 10* CFU/mL The duuige inamount of live bacterial cells, sensory quality of carrot

• 'ce during storage at 4'C have been analyied. The results indicated Ihu Lat^obaanus acidophilus HT got belter survival ability in carrot juice than two remained strains. Lsctobacillus acido[Jiilui HT strains have coottnued bdnensed to detennine the iofluence of bacteria ratio (1,3,5,7%) (v/v) oo the feraientaoon ability. Hie resulB showed that camrt Juice femieoted hy lactobadllus aadr^lalus HT with 3% and 5% coocentration at 37°C durina 24h has given Ihe high biomass and a good organoleptic quality for canot juice probiotics products. However, the sample with auppleraented -jcrobial biomass coneentiatiooa of 5% to make piarantee (he living cells b camK juice afler 40 days of storage at 4°C was more than lO'CFU/raL.

The prelimmary studies showed that canot juice has been suitable tor production of probiotics drinks.
