Chdt luong ben trong cua chudi sii (Musa paradisiaca var Awak) duoc xac dinh bang phuong phap phan tich thanh phan hoa hoc, cam quan va phuong phap vat ly sir dung quang pho can hdng ngoai. Cam quan (mau sdc, htrong thom) ve do chin cua cbudi thay ddi tbeo tuong quan ham luong tinh bot va luong ducmg khu CO trong chudi. Sir dung anh sang hong ngoai trong khoang buoc song 740 - 1070 nm cho thay co tiroTig quan tdt giua pho bdng ngoai va ham lugng tmh hot va duong khir co trong chudi voi cac he so tuong quan lan Itrgt la 0,843 va 0,852. Ham luong acid co trong cbudi su khong the bien nidi tuong quan tdt voi do chin cua chudi. Chudi sii dupe theo dot va Idy mau tir vuon chudi 6' tinh Long An. Thdi diem thu hai ciia chudi bat dau tir luc chudi dat dp chin ky thuat, dp thudn thuc frai dat 85 - 90% (98 ngay- 99 ngdy tudi) va theo doi qua trinh chin cua chudi fren cay eho den khi chudi qua chin (104 ngay tudi). 2.2. Phmmg phap nghidn cuu

2.3. Phirong phdp phan tich

Tbe internal characteristic of bananas (Musa paradisiaca var. Awak) is examined by chemical composition analsyis, sensory evaluation of peel and physical methods using near infrared light spectrum. The apprarance including color of peels, banana aroma from vary stage of maturity had a correlation to tbe starch content and reducing sugar content in bananas. Bananas at 98-day maturity have high starch content Tlie received spectrum recorded using the near infrared hgbt in the wavelength range of 740 - 1070 nm showed a good correlation between infrared spectrum and starch and reducing sugar content in bananas with correlation coefficients 0.843 and 0.852, respectively. Ihis correlation led to set up a new tool to estimate tbe mtemal charaterisUc of bananas durmg harvest and post harvest banling.
