ABSTRACT:

This research is to extract and analyze the antioxidant activity of hylocereus polyrhizus by DPPH method. The research vi^as conducted with following solvent extraction and extraction condition: the suitable material drying temperature at dCC, the drying time of 30 minutes, the solvent / material ratio of 25/10 (v/w), the percentage of ethanol / water .solvent of 60/40 (v/v), the extraction time of 4 hours at the room temperature and the pH of 4 - 6.. The research's results show that the extract exhibits antioxidant capacit, the absorption reduction is at 46% widi a trolox concentration of 405pM trolox / liter (TEAC/L molar).
