Oolong IS a traditional Chinese tea produced through a process including withering the tea leaves and oxidation before curling and twisting. There are some varieties of tea products with different flavours based on the degree of oxidation. In this study, the volatile components from 6 types of oolong tea products were obtained by hydro-distillation using Clevenger type apparatus combined with solvent extraction method, analyzed by GC-MS, and then compared to those obtained by SPh/IE method. These results showed that the main volatile components of these studied tea products were (Z)-linalool oxide, (E)-llnalool oxide, linalool, epoxylinalol, 3,7-dlmethyl-1,5,7-octatrien-3-ol, (E)-geraniol. nerolidol, (Z)~2-penten-1-ol, furfural, phytol...
These oolong tea products were also classified into 3 groups based on the volatile composition in the essential oil obtained by hydro-dlstillatlon

2. Nguyen vat lieu va Phirong phap nghien cihi 2.1. Nguyen vgt lieu
Sau raau che d - long dugc mua tir cdc sieu thi tai Ha Ngi, Sai Gdn vd tai Nhat Ban trong thdng 10/2017. Dung radi diethyl ether dugc raua tu Sigraa (Due), dat tidu chuan phan tich sac ky.

2.2. Phuffng phdp thu nhan tinh dau
Hda tan 3 g dudng saccharose vao 500 ml nude cdt trong binh cdu dung tich 2 1 vdi 100 g che d - long (giup gia tang ndng dg cua cac thdnh phdn bay hoi cd tt-ong pha hai), Nguyen lieu dugc ngara 16 gid trudc khi dua di chung cdt bang thiet bi Clevenger trong 3 gid. 2.3. Phuffng phdp vi chiii pha rdn (SPME) thu nhgn thdnh phdn bay hffi
Cho 4 g che d - long cung vdi 80 ml nude sdi vao brah tara giac 250 ml, day nut kin vd tien hanh hara tt-ong vdng 5 phiit, Sau dd ldy ra 5 nil nude che vua pha bd vdo Ig 25 rai da co sdn 1,5 g NaCI. Cara ddu kim 65 pra polydmiethylsiloxane/divinylbenzene (PDMS/DVB) vao Ig ralu, dat lg vao be dn nhidt gifl d SO^C n-ong vdng 30 phut, sau do dem di phan dch thanh phdn bay hai tt-en thidt bi GC-MS.
2.4. Phuffng phdp phan tich thdnh phSn bay hffi co trong chat thffm thu duffc
Su dung raay GC-MS QP 2010 (Shiraazu, Nhdt Bdn) vdi cgt raao qudn DB-5 (dudng kinb 0,25 mra, dai 30 ra, do day ldp phun trdng 0,25 pm) de phdn tich thanh phdn bay hai thu dugc. Chuang trinh nhidt do: dO^C (gili 4 phiit) tang Ien 230°C vdi tdc dd tang nhiet la 3''C/phdt va giii trong vdng 15 phut Digu kien MS: ion hda mau d thd ion hda 70 eV, nhiet do cd ngudn ion hda 200"C, khi mang heli tdc do 0,5 raVphiit, tdc do chia ddng 1:10 [3], Djnh tinh vanhan biet cdc thanh phdn bang cdch so sdnh cdc mau phan ra MS cua nd vdi cdc raau phan ra cac chat cd trong thu vien pho (Willey, Cherastation) ciia mdy GC-MS;

2.5. Phuffng phdp phdn nhom sdn phdm Su dung phuong phap phan tich thanh phdn chinh PCA [6, 7] nhara pbdn nhdm cac sdn phdra va xac drah cdc thanh phdn bay hoi chinh ddc tnmg cho nhdra san pham tuong irng. thuc hien tren phdn radm S P A D 7 .
3. Ket q u a va thao luan
3.1. Thdnh phan bay hoi co trong tinh dau cdc mau che nghien ciru
_ Tinh ddu che d - long sau khi chung cdt va chidt chdt thom bang dung mdi diethyl ether dugc dera di phan tich bdng GC-MS vd kdt qua dugc bidu didn d bang 2. Kdt qua phdn tich cho thdy phat hidn dugc 31-43 cau hi bay hoi trong thdnh phdn tinh ddu thu dugc. Phdn tram dien tich peak ciia cdc hgp chdt cd trong 6 mdu nghien cuu cd su khde nhau,"ttjy nhidn CO su tuang ddng vg cac cdu ttl bay hai chinh nhu cac terpene (linalool, (Z) linalool oxide, (^j-linaiool oxide, nerolidol, 3,7-dimethyl-!,5.7-octatrien-3-ol a- terpraeol) deu cd raat vdi ham lugng ldn trone tinb dau thu duoc. Ngoai ra cdn cd su cd radt ciTa cdc aldehyde (hexanal, (^-2-hexenal. benzaldehyde, benzeneacetaldehyde), nrgu ^a keton khdng no nhu
(2)-2-penten-l-ol, (Z)-3-hexenol, 6-methyl-5-hepten- 2-one tt'ong ca 6 mau nghien cdu. Ben canh dd, phytol, mot hgp chat cd hoat tinh sinh hgc tdt, da duac phat hien tt-ong cac mdu che vdi ty le thanh phSn khac nhau; nhieu nhdt la trong radu che d - long Bai Loan' (ddng gdi t^i Nhdt) va che d - long Nhdt Ban vdi hdm lugng ldn lugt Id 18,55% va 11,46%) [6ng dien tich peak. Ham Iugng phytol trong che Lara Ddng, bao gdm ca Tara Chau va Hanh Dung Id it nhdt, chidm 0,83%i va 0,20%.. Cac thanh phan bay hoi chinh cd trong sau radu che nghien citu khi tien hanh chirag cdt va ldn su dung phuong phdp vi chidt pha rin (SPME) dugc so sanh va kdt qua dugc bidu didn d bdng 3. Kdt qud cho thay cac thanh phan chat tham chinh nhu (2)-Iinalool oxide, (£>linaIool oxide, Imalool, 3,7-dunethyl- I,5,7-octatrien-3-ol ddu xuat hidn trong cac mdu che d ca 2 phuang phdp nghien cuu va chidm ham Iugng ldn. Day Id nhirng chdt cd vai trd rdt quan trgng trong vide tao nen mui thora dac tnmg eua che. Ben canh dd phytol, fZ)-2-penten-i-ol, (E)-geTamol khdng phat hidn dugc bang phuang phap SPME nhung cd raat trong thanh phan bay hai thu dugc bdng phuong phdp chung cdt. Nghien cuu ciing phat hien 6-raethyl-5- hepten-2-one cd raat trong ca sau radu bang phuong phdp SPME nhung chi tira thdy trong bdn trdn sau radu (trir hai radu cua Lara Ddng) bang phuang phdp chung cdt.
