Summary

PHYSIOLOGICAL FUNCTION OF GLUTAMATE IN STOMACH L-glutamate is an important multifunctional essential amino acid involved in intermediary metabolism, excitatory neurotransmission or taste perception. The capability of stimulating umami perception make glutamate and its salts become popular food additives. In addition, evidence from recent studies suggests the new physiological function of glutamate in food digestion in stomach. This review will discuss about the physiolpgical function of glutamate in stomach.
