VI. KESIMPULAN DAN SARAN

Kesimpulan

Berdasarkan penampilan yang ditunjukkan hewan percobaan dan aktivitas enzim antioksidan, dendeng hasil modifikasi (formulasi dan teknik preparasi) merupakan sumber protein hewani yang aman, meskipun untuk dendeng yang di- curing dengan nitrit masih memiliki resiko terhadap kerusakan sel hati dan ginjal jika dikonsumsi secara terus menerus dan dalam jangka waktu yang lama.

Saran

Beberapa saran yang dapat disampaikan berdasarkan hasil penelitian ini adalah:

1. dendeng hasil modifikasi, terutama yang diproses tanpa curing dapat digunakan sebagai sumber protein hewani yang aman, sehat, utuh dan halal;

2. dendeng yang diproses dengan curing sebaiknya tidak dikonsumsi secara terus menerus dan dalam waktu yang lama;

3. aplikasi paket teknologi yang dihasilkan pada penelitian ini perlu dilengkapi dengan pengujian umur simpan terlebih dahulu.
