G. Penerapan Sistem Inventory Di Hollywood Bar Bandung
Dalam rangka mengawasi kegiatan operasional di bar, manajemen juga perlu memperhatikan pencatatan ketersediaan botol minuman alkohol maupun bahan-bahan lain yang tersedia di bar salah satunya dengan menerapkan sistem inventory. Selain dapat mengawasi, sistem inventory juga memiliki beberapa fungsi yaitu untuk mencegah adanya kecurangan yang dilakukan oleh bartender dan mengetahui stok minuman atau bahan-bahan lainnya yang sudah/akan habis agar dapat dilakukan proses pembelian. Dalam hal ini inventory terbagi atas 2 jenis yaitu physical inventory dan perpetual inventory.
Physical Inventory menurut Dopson, Hayes, dan Miller (2008: hlm 185) yaitu, “physical inventory is a system in which an actual physical count and valuation of all inventory on hand is taken at the close of each accounting period”. Dapat diartikan bahwa physical inventory adalah sistem dimana aktual perhitungan fisik dan penilaian semua persediaan dilakukan disetiap akhir periode akuntansi. Pada dasarnya kegiatan inventory ini harus dilakukan secara berkala setiap bulan di minggu terakhir bulan tersebut. Seperti yang dijelaskan oleh Dittmer and Keefe (2009 : hlm 229) yaitu, “Physical inventory is taken at the close of an accounting period, typically after the
close of business on the last day of a calendar month”.
Dalam pelaksanaannya kegiatan physical inventory ini dilakukan oleh 2 orang, yaitu dengan pembagian tugas 1 orang menghitung dan 1 orang lain mencatat. Dijelaskan juga oleh Dittmer and Keefe (2009 : hlm 229) yaitu, “commonly requires two people: one to count the units on the shelves and the other to record the numbers
in the inventory book”
.
Fungsi dari physical inventory itu sendiri adalah untuk mengetahui biaya aktual yang terjadi pada makanan dan minuman dalam bulan tersebut. Fungsi lain dari sistem physical inventory ialah untuk mengendalikan ketersediaan minuman yang tersedia di bar dan juga mencegah adanya kecurangan yang dilakukan oleh bartender. Hal ini sesuai dengan pernyataan Dittmer and Keefe (2009 : hlm 229) bahwa, “The purpose of doing this is to determine the actual cost of the foods and beverages used during the month”.
Perpetual Inventory menurut Dopson, Hayes, dan Miller (2008 : hlm 185) yaitu, “A perpetual inventory system is one in which the entire inventory is counted and recorded,then additions to and deletions from total inventory are recorded as they occur”. Dapat diartikan dari penjelasan diatas bahwa perpetual inventory adalah suatu sistem perhitungan ketersediaan barang berdasarkan pengadaan dan pengurangan dari total inventarisasi tercatat yang ada. Dalam sistem ini dibutuhkan dokumen pendukung salah satu nya adalah Bin card.
Bin card adalah sebuah dokumen yang mencatat rincian penambahan dan pengurangan pada tingkat ketersediaan. Biasanya dokumen ini sangat diperlukan khusus nya pada area penyimpanan minuman keras (liquor) dan anggur (wine), yang mana setiap produk dari liquor dan wine tersebut memiliki bin card masing-masing. Seperti yang dikutip oleh Dopson, Hayes dan Miller (2008 : hlm 185) yaitu, “Perpetual inventory is especially popular in the area of liquor and wine, where each product may have its own inventory sheet or, in some cases, a bin card . . . A bin card is simply an index card or other record that details additions to and deletions from a given product’s inventory level”.
