Local markets
The development of a Western Australian market for goat meat seems to depend on the ethnic demand for capretto meat. No organized market development has been possible because of the inconsistent supply of quality animals.
Some industry sources estimate the local market could use 1200 to 2000 capretto car- casses a month, however this could range from 400 to 4000 plus an unspecified number of chevon carcasses. Sales of goat meat would compete with sales of lamb and mutton rather than beef.

Overseas markets
Overseas markets for goat meat consist of exports of live animals and carcasses.
Australian exporters of live sheep suggest between 50,000 and 100,000 goats a year could be exported to the Middle East. This estimate is based on no promotion or market development and so may underestimate market potential. A high priced market will probably demand live goats; however a lower priced market for chilled or frozen carcass meat could be developed.
Taiwan and Trinidad and Tobago are the major importers of goat carcasses. Both markets depend on prices of mutton. If mutton prices are more favourable than goat prices, mutton is imported. Other markets could be developed in Japan and Asia, but prices paid for goats would depend on the prices of other processed meats.
The Western Australian Meat Marketing Corporation buys goats on a published sched- ule based on carcass weight plus skin. The price schedule is much less variable than lamb price schedules. Table 4 shows the schedule at June 1987 and February 1988.
Export markets
In the 1987 calendar year Australia exported 5382 t of goat meat, a 22 per cent increase on 1986. Western Australia exported 1869 t, up 33 per cent on the previous year. The major markets were the Caribbean and Taiwan.
Live goats for slaughter are exported mainly to Saudi Arabia, Oman, the United Arab Emirates and Kuwait.
