PEMBUATAN EDIBLE FILM DARI TEPUNG TAPIOKA DENGAN PENAMBAHAN KITOSAN, GLISERIN DAN
PATI BIJI NANGKA ( Arthocapus Heterophyllus ) SEBAGAI PEMBUNGKUS DODOL
ABSTRAK
Telah dilakukan penelitian pembuatan dan aplikasi edible film dari pati biji nangka ( Arthocapus Heterophyllus ) dengan penambahan tepung tapioka, kitosan, dan gliserin sebagai plastisizer. Edible film dibuat dengan mencampurkan pati biji nangka dengan variasi penambahan 0,5 g ; 1 g ; 1,5 g ; 2 g dan 2,5 g yang ditambahkan dengan 90 akuades, 2 g tepung tapioka, kitosan 2% dan gliserin sebanyak 1 ml sebagai plastisizer. Setelah homogen dicetak di atas plat akrilik, dikeringkan di dalam oven pada suhu 35-40ºC selama 2 hari. Karakterisasi edible film secara fisik diperoleh ketebalan 0,16 mm, kuat tarik 0,322 KgF/mm2 dan kemuluran 11 %. Uji morfologi SEM (Scanning Electron Microscopy) menghasilkan edible film dengan permukaan yang rata serta kompatibel dengan tipe bentuk morfologi yang tidak begitu teratur. Serta analisa FTIR (Fourier Transform Infrared) menunjukkan spektrum pada daerah 2931,80 cm-1 adanya gugus alkana (CH), dan spectrum pada daerah 3410,15 cm-1 menunjukkan gugus hidroksil (OH). Hasil analisa kadar nutrisi edible film menghasilkan kadar karbohidrat 73,67 %, protein 4,29 %, lemak 6,55 %, air 8,13 % dan abu 7,36 %. Uji aktivitas antibakteri edible film dengan metode Kirby Bauer menghasilkan antimikrobial sebesar 0,83 mm pada bakteri Escherichia coli dan pada bakteri Staphylococcus aureus dengan antimicrobial 1 mm yang menandakan bahwa edible film memiliki zona hambat yang mampu menghambat pertumbuhan bakteri. Dan dilihat dari pertumbuhan koloni bakteri dengan metode Standart Count Plate pada edible film sebagai pembungkus dodol menghasilkan jumlah koloni yang lebih sedikit dibandingkan dodol yang dibungkus plastik dan dodol yang dibungkus daun pinang.

PRODUCTION EDIBLE FILM OF TAPIOCA FLOUR WITH ADDITION OF KITOSAN, GLISERIN AND SEEDS OF JACK
FRUITSTARCH(Arthocapus Heterophyllus) AS A WRAPPING DODOL
ABSTRACT
The research has done on the manufacture and application of edible film from seeds jack fruit starch (Arthocapus Heterophyllus) with the addition of tapioca starch, chitosan, and glycerin as plasticizer. Edible film is made by mixing the seeds jack fruit starch with a variation addition of 0.5 g; 1 g; 1.5 g; 2 g and 2.5 g and addition with 90 distilled water, 2 g tapioca flour, 2% chitosan and 1 ml glycerine as plasticizer. Once homogeneous is printed on an acrylic plate, dried in the oven at 35-40ºC for 2 days. The characterization of edible film was physically obtained by 0.16 mm thickness, tensile strength of 0.322 KgF / mm2 and elongation of 11%. SEM (Scanning Electron Microscopy) morphology results in edible films with flat, tight and compatible morphology. As well as FTIR analysis (Fourier Transform Infrared) shows that spectra at 2931,80cm-1is showed region of alkane (CH), and of spectrum at 3410,15 cm-1 is showed region of hydroxyl (OH). The results of nutrient edible film content analysis levels produces carbohydrate 73,67%, 4,29%protein, 6,55% fat, 8,13% wash and 7,36% content ash. The antibacterial activity of edible film by Kirby Bauer method resulted in an antimicrobial of 0.83 mm in Escherichia coli bacteria and in 1mm antimicrobial Staphylococcus aureus bacteria indicating that the edible film has a drag zone capable of inhibiting bacterial growth. And seen from the growth of bacterial colonies with the method of Standard Count Plate on edible film as dodol wrappers produce fewer numbers of colonies than dodol that is not wrapped and dodol wrapped in betel leaves.
