formula
for converting their cafeteria leftovers into a profitableprod- uct.Stanley Yoshimoto, teacher and ad- visor of the school's Silversword

"Our
school cafeteria is fortunate to beequippedwithashredder,"hebegins.Disposable lunchtrays, milk cartonsand foodscrapsallgointothismachine.
Our members
placetheshreddedandbagged pulp into wheelbarrows, take it back to the ag area anddump
it into a compost heap."Maui
studentsemptyingfresh pulpfrom the cafeteriaontothecompost
heap.Once
piled, certain chemicals are applied to control fliesand
odor.Selected fertilizersareaddedtoenhance microbial action, thus speeding the de- composing process. Instead ofthe usual threeto sixmonths,thecompostisready foruseinsixweeks.
The
processisfast, butdoes require special attention."During the decomposition period,"
explains Stanley, "students turn the
compost
over with shovels and hoes twiceaweek.Indryweather,theheapis irrigatedto keep the microbes aliveand active."Biologically, compostingrequires the presence of bacteria.
The
organisms eventually die after breakingdown
the molecular structure ofthe waste.When
bacteria terminates, a rich supply ofni- trogenand phosphorus
compounds
isre- leased. Plants can utilize the resulting nutrientswhen
compost is added to the soil.At the end ofthe composting period, the original pile will have decreased in size about 50 percent due to a natural breakdown. It is then fumigated to kill
any harmful organisms and
