Investigation of the teaching achievement of the

natural science curriculum in general education – an example of a “Nutrition and Health” general

education course from a university in central Taiwan

ABSTRACT:

This research uses data collected from students who have taken a “Nutrition and

Health” general education course in a university in central Taiwan in the first semester of 2006 academic year. The purpose of this research is to investigate whether the students have gained the appropriate knowledge of nutrition and adapted good dietary habits in order to improve their health after the course. This research evaluates students’

achievement using a questionnaire, which was completed by students at the beginning and end of the course. There were 329 students involved in this study, and 235 questionnaires were returned; the recovery rate was 71.4%. The results of this study were obtained after analysis of the 235 questionnaires, and learning motive analysis showed that the majority of students who took this course were interested in improving their health through better nutrition and diet. Analysis also showed that the nutrition knowledge of the students improved from 86.6 ± 6.9 before the course to 92.1 ± 4.5 (P <0.001) afterwards. This study reveals that the students have shown a good learning achievement in this “Nutrition and Health” general education course. In addition, the assessment of the lecturer’s teaching, as evaluated by the students at the end of the semester, shows a satisfactory score of 90.9, suggesting that the students rate this course highly.
