Pengukuran nilai pH setelah proses pembuatan larutan ASC sebaiknya dilakukan sebelum penggunaan sebagai sanitaiser. Hal ini berguna untuk mengetahui pH standar yang disyaratkan oleh Food Drug Administration yaitu sekitar 2,3 -3,2. Pengukuran konsentrasi larutan setelah pencelupan dan pengukuran residu Acidified Sodium Chlorite
