PENGARUH SUHU TERHADAP KANDUNGAN KALSIUM DAN BESI PADA DAUN SINGKONG (Manihot esculenta Crantz)

ABSTRAK
Salah satu jenis sayuran yang memiliki kandungan mineral dan vitamin yang baik bagi pertumbuhan dan kesehatan tubuh adalah daun singkong (Manihot esculenta Crantz). Daun singkong ada dua jenis yaitu, daun singkong biasa dan daun singkong keriting. Daun singkong ini mengandung vitamin dan mineral, diantaranya yaitu kalsium, besi, protein, lemak, karbohidrat, posfor, vitamin A, vitamin B dan vitamin C. Proses pengolahan berpengaruh terhadap kelarutan mineral dan gizi bahan pangan karena terjadi kerusakan oleh panas yang berakibat menurunnya nilai gizi. Pengolahan dengan mengukus akan mengurangi kandungan gizi dan mineral berupa kalium, kalsium, natrium, fosfor, magnesium dan besi, namun tidak sebesar pada proses perebusan karena bahan makanan tidak langsung berhubungan dengan air, maka penelitian ini bertujuan untuk mengetahui perbedaan kadar kalsium dan besi pada daun singkong biasa dan daun singkong keriting segar dengan proses perebusan pada suhu 60oC, 70oC dan 80oC.
Penelitian ini meliputi proses dekstruksi kering kemudian analisis kuantitatif kalsium dan besi dilakukan dengan menggunakan metode spektrofotometri serapan atom (AAS) yaitu logam kalsium pada panjang gelombang 422,7 nm dan logam besi pada panjang gelombang 248,3 nm. Keuntungan dari metode ini adalah dapat menentukan kadar logam tanpa dipengaruhi oleh keberadaan logam yang lain dan logam dalam jumlah kecil.
Hasil penelitian menunjukkan bahwa persentase penurunan kadar pada daun singkong biasa setelah direbus pada suhu 60oC yaitu untuk kalsium 13,13% dan untuk besi 27,32%, pada suhu 70oC yaitu untuk kalsium 28,90% dan untuk besi 37,15% dan pada suhu 80oC yaitu untuk kalsium 35,53% dan untuk besi 49,74%. Sedangkan Hasil persentase penurunan kadar pada daun singkong keriting setelah direbus pada suhu 60oC yaitu untuk kalsium 20,72% dan untuk besi 19,3532%, pada suhu 70oC yaitu untuk kalsium 27,34% dan untuk besi 41,16% dan pada suhu 80oC yaitu untuk kalsium 36,19% dan untuk besi 62,41%. Hasil ini menunjukkan spektrofotometri serapan atom yang digunakan memenuhi persyaratan akurasi dan presisi. Dari hasil uji statistik dengan uji ANOVA dapat disimpulkan bahwa kandungan kalsium dan besi pada daun singkong biasa dan keriting segar lebih tinggi secara signifikan dengan yang direbus.

INFLUENCE OF TEMPERATURE ON THE CONTENT OF CALCIUM AND IRON IN CASSAVA LEAVES (Manihot esculenta Crantz)

ABSTRACT
One type of vegetables that contain minerals and vitamins that are good for the growth and health of the body is cassava leaves (Manihot esculenta Crantz). There are two types of cassava leaves, cassava leaves regular and cassava leaves curling. The cassava leaves contain vitamins and minerals among which calcium, iron, protein, fat, carbohydrates, phosphor, vitamin A, vitamin B and vitamin C. treatment with boiling will reduce the mineral content and nutritional in the form of potassium, calcium, sodium, phosphor, magnesium and iron, because to damage by heat result in the decreased nutritional value. This study aims to determine the differences in the levels calcium and iron in cassava leaves regular and cassava leaves curling fresh the boiling process at a temperature 60oC, 70oC and 80oC.
This research is processing by using dried destruction, and quantitative analysis of calcium and iron were calculated using atomic absorption spectrophotometry (AAS) Calcium metal is at a wavelength of 422.7 nm and metallic iron at a wavelength of 248.30 nm. The advantage of this method is to determine the metal content without being affected by the presence of other metals and metal in small quantities.
The results showed the percentage decrease in the level of cassava leaves regular after the boiling at a temperature of 60oC for calcium is 13.13% and iron 27.32%, temperatur of 70oC for calcium is 28.90% and iron 37.15%, and temperatur of 80oC for calcium is 35.53% and iron 49.74%. while result percentage decrease in the level of cassava leaves after curling after the boiling at a temperatur of 60oC for calcium is 20.72% and iron 19.35%, temperatur of 70oC for calcium is 27.34% and iron 41.16%, and temperatur of 80oC for calcium is 36.19% and iron 62.41%. These result showed that using atomic absorption spectrophotometry method fulfilled the requirement of accuracy and precision. The result of ANOVA statistical test can be concluded that the content of calcium and iron of cassava leaves regular and curling fresh significantly higher with braised.
