8. ASSAM LAKSA & SIAMESE LAKSA

Smooth round rice noodles mix of spices and flavours, thickened with mackerel fish topped with heaps of fresh vegetables and herbs. Finally, lime and a spoonful of sweetened shrimp paste (heh ko sauce).

Asam Laksa is a kind of Asam Pedas (spicy tangy soup) which does not require its spice paste to be fried.

Siamese Laksa/Lemak Laksa like most other coconut

based curry, benefits from its spice paste being tumis (fried) to bring out its fragrance.

Hence, Siamese Laksa is a little richer than asam laksa. It is more creamy and less tangy.

Tau Sar Piah: (or Tambun Biscuit) sweet bean paste biscuits (Big & small - depends to individual choice)

Beh Teh Saw: (马蹄酥) literally translates as Horseshoe Biscuits as the pastry dough was pasted into to the side of the clay oven for baking, hence the end-product appeared to look like that of a horsehoe.

The pastry is filled with maltose (麦芽糖) and sesame.

Pong Piah: 碰饼

Sugar Puff. Pastry is filled with melted pure white sugar.

Hneoh Piah:

Pastry is filled with finest brown sugar.

Kapai Biscuits (加拜) or Roti Kapai: is a crispy, salty, and fragrant biscuit with roots dating back to India. Back when plantation workers were being imported from India to Malaysia, the Indians could not afford proper meals, hence they carried these biscuits in their pockets with them to work.

Roti Babi is basically “french toast” with minced pork meat with cabbage, carrots, onions, mushrooms and crabmeat, stuffed into thick white bread. The bread is then coated with beaten eggs and deep fried until golden brown. The type of bread is important.

It should be white bread that is fluffy and light.

Hainanese Choon Piah /Spring Roll, uses a thicker crepe-like skin and its ingredients are more cabbage-based compared to the popiah.
