In this research, the relation of cutting condition and cutting tool geometrical parameters on qualitiess and productivity of Tra fish fillet in real cutting process in Mekong Delta are built by design ofexperimet\t method. Thank to these relations, solution to control cutting condition automatically is built to meet the quality and productivity targets of automatic Tra fish filleting process.

Keywords: Tra fish fillet, real cutting conditions, geometrical parameters of fillet cutting tod qualities and productivity of Tra fish fillet, fish fillet gapping.

Trong qua trinh cat thflc, mdn dao xay ra anh hfldng den chat Iflpng va nang suat phi le, vi vay, viec xay dflng giai phap dieu khien tfl dpng che dp cat theo muc tieu chat Iflpng va nang suat la van de cap thiet can dflpc nghien cflu nham hodn thien giai phap phi le tfl ddng cho ca Tra. Day cflng chinh la npi dung cua bai viet nay.

Bdi bao nay gidi thieu phflong phap xac dinh moi quan he gifla che dd cat vd thdng sd hinh hpc dung cu cat theo muc tieu chat Iflpng va ndng suat phi le trong qua trinh cat thflc (cd xet den mdn dao). Cac mdi quan he nay la ca sd cho giai phap dieu khien tfl dpng che dd cat qua trinh phi le ca Tra tai DBSCL.

Thiet bi nghien cflu la may phi II tfl ddng thi nghiem dflpc che tao tren co sd md hinh phi le tfl ddng ca Tra [1, 2, 3].

4. P H l / O N G PHAP D A N H G I A 4.1. Do nijft thit va d i l m do nflt thit [6]

Nflt thit Id hien tflpng co thit hi tach ra tao thanh vet nflt trln milng phi 11. Vet nflt nhd neu chieu ddi vet nflt ngan hpn 2cm. Vet nflt Idn neu chieu ddi vet nflt bang hay dai hdn 2cm. Chieu ddi vet nflt dflpc xac dinh bang thfldc cap Mitutoyo 550-311-10, vung do tfl 0 den 200mm, dp chinh xac 0.01 mm.

Dp nflt thit la so vet nflt d i m dflpc trong vung dien tich khao sat 1 inch^ tren mieng phi le. Dp nflt thit dflpc danh gia bang diem, diem ndy, gpi la diem dp nflt thit. Thang diem danh gia dp nflt thit tfl 0 den 5 (bang 3).

Viec xac dinh diem dp nflt thit dflpc thflc hien trong vdng 5 phflt sau khi phi le d milng phi 11 ben phai.

Dflpc xac dinh tfl khi diing cii cat bat dau phi le ca d i n khi dao thoat hodn todn khdi vung phi le. Thdi gian phi le dflpc xac dinh bang ddng hd dien tfl bam giay Casio HS-3V.

5. CHUAN BI M A U [6]

Ca chpn mau cd dp tuoi tfl 9 d i n 12 thang (trpng Iflpng tfl 0.8 d i n 1.2 kg). Khu vflc khao sat Id cac be ven sdng Hau,

dien tich 1 m^ tai tam be (cd khoang 80 d i n 120 con). Mdu dflpc lay ngau nhien tai vi tri 4 gdc vd tdm cua vung chpn mau.

Ca sau khi chpn dflpc cat mang, trich mau, cat dau va moi noi tang trfldc khi tien hanh phi le.

6. T H I E T KE VA TIEN H A N H T H I NGHI£M

Chpn phflpng phap thiet kl nhdn td todn phan 2 mflc de bo tri cac thi nghiem. Vdi 3 yeu td tac dong (k=3), sd thi nghiem can 1dm la N

= 2'' = 8, sd thi nghiem d tam dfl^c chpn la 5.

Dung dao thi nghiim cat vao gd de dat dflpc dp mdn hfldng kinh ngdu n h i l n vd 1dm giam dfldng kinh dao cat theo cac gia tri dflpc bo tri trong thiet ke thi nghiem.

Tien hdnh phi le vdi dijng cii cd cac dfldng kinh vd cdc che do c5t khdc nhau. Ghi lai thdi gian phi le t tflng ddi tflpng va diem dp niit tiijl tren tflng milng phi le.

7. KET QUA THlTC NGHIEM Tien hanh cac thi nghiem tim mien gidi ban cua dfldng kinh dao, sd vdng quay cua dao cat vd Ifltfi^

tien phdi [7], cac thi nghiim nay cho ta ket qua nhfl sau:
