How To Make Salt & pepper squid
Ingredints :
3 (about 600g) large cleaned squid hoods
1L (4 cups) vegetable oil
40g (1/4 cup) plain flour
1 teaspoon salt
1 teaspoon Chinese five-spice
1/2 teaspoon chilli powder
Lemon wedges and soy sauce with sliced fresh red chilli, to serve
Method :
Step 1
Use a sharp knife to cut through 1 side of each squid hood lengthways. Open out flat with inside surface facing up and score surface diagonally. Cut into 3.5cm squares and pat dry with paper towel.
Step 2
Heat the oil in a large wok over medium heat until it reaches 190°C on a confectionary/oil thermometer. (Or, add a 5cm cube of bread to the oil - it should turn light golden in 10 seconds.)
Step 3
Meanwhile, combine the flour, salt, pepper, Chinese five-spice and chilli in a medium bowl. Add the squid and toss gently to coat.
Step 4
Remove half of the squid from the flour mixture and shake off any excess. Add to the oil and cook, turning with a slotted metal spoon, for 2 minutes or until the squid just turns golden and curls. Use the slotted spoon to transfer the squid to a large plate lined with paper towel to drain. Reheat the oil in the wok to 190°C. Repeat with the remaining squid.
Step 5
How To Make Batagor
Ingredients :
500 g white fish meat, pureed
2 tablespoons shallots chopped finely
2 tsp pepper powder
1 tsp chicken powder (not a requirement)
3 tablespoons sugar
3 tsp salt
1 tablespoon sesame oil
3 eggs
450 g plain fluor
10 large blocks of firm tofu, cut into two triangles
1 spring onion (cut into ½ cm pieces)
Step to Make Batagor:
1. Put all the ingredients (except the tofu) in a big bowl, mix all, knead until it become a perfect dough even better slighty drippy
2. Fill the tofu with the dough after carefully hollowing out the center of the tofu.
3. Deep fry until until golden brown.
4. You can add peanut sauce.
Ingredients :
1. 1 mango (take the meat only).
2. 150 grams of strawberries (cleaned and cut into small). 3. sweetened condensed milk 1 sachet of vanilla.
4. Sugar to taste. 5. Ice cubes to taste. 6. Water mature taste.
How to make :
First prepare a blender and then enter ingredients such as sliced strawberries, sweetened condensed milk to taste, sugar, some water and ice cubes. Blender all these ingredients until smooth stretcher and enter into a separate container. Do the same thing to a mango. Separate each of the pieces that have been blended.
Next prepare the cup and then pour the strawberry juice, mango juice and then the next. How presentation to taste.
