iiI Indonesian Tea Catalogue
Message from
Minister of Agriculture Republic of Indonesia
Tea has been part of the way of life in Indonesia for more than 200 years. Although after the World War II, the Indonesian tea estates were in very poor condition. Wrecked factories and tea bushes that had reverted to their wild state were just two of the problems which faced by the tea estates.
By 1984, after a lot of hard work and investment, tea exports from Indonesia began to make their mark on the tea market. Since that time, improvement in tea production and replanting of old estates has continued, with the factories investing in new machinery. Now, Indonesia had some 142,000 hectares under tea cultivation, with 65,000 of these being on Java and the other on Sumatra Island.
In 2005, Indonesia exported over 102,000 MT of tea, accounting for over 7% of world exports.
Today, tea is a drink that is enjoyed by people across the globe and it becomes one of the most universal of all drinks. Tea is consumed by more people and in greater quantity than any beverage except water. More people adore the taste of Indonesia teas, so it is the considerable reason why
Indonesia should present its best tea products to satisfy the customers' taste.
Teas from Indonesia are light and flavorsome. Whatever the tea, it is extremely refreshing taken without milk: garnished with lemon, it makes an ideal drink for the figure-conscious.
This Indonesian tea catalogue is presented to you with hope that you can be acquainted with delicious of Indonesian, green tea, black tea, and other teas.
Enjoy the Indonesian teas.

TEA
T
ea seeds were first introduced into Indonesia in 1684 from Japan, by a German named Andreas Cleyer. In 1878 the first Assam tea seeds were imported from Sri Lanka by R.E.Kerkhoven, and planted at Gambung, West Java. The tea industry in Java developed steadily. In 1910 The Assam-tea plantations were established in North Sumatra, followed by plantations in West Sumatra and Southern Sumatra. Black tea exported in 1939 totaled to an amount of 73,541 tons (van Emden and Deijs, 1949).
The Health Benefit of Tea
• Health Research
Tea is accredited as being capable of curing diarrhea, headaches, and migraines, fevers, growths, tumors, and the full range of cancers, repressing cold, f1ues and other viruses. It increases energy, stamina, and immunity, relieves physical fatigue and mental stress. It facilitates both blood f1ow and urinal discharge and by breaking down cholesterol, fats, sugar, toxins, and chemical sediments in the organs, urinal tract and circulatory system it helps the body to remove sediments and stones and reduces blood pressure. It heightens the conductivity of the hervous system, promotes protein absorption for increased tissue growth, and promotes conversion of sugar to energy thus reducing the risk of diabetes and glaucoma and its f5-carotene improves eyesight.
The polyphenols in tea are the active components which give tea its medicinal properties. Polyphenols types and averages for teas are as follows:

plant (Camellia sinensis, or C. thea) is an evergreen related to the camellia and indigenous to Assam (India) and probably to parts of China and Japan .•
Tea plant grows in tropical to sub-tropical climates. In addition to tropical climates (at least 50 inches of rainfall a year, 60 mm/month), it also prefers acidic soils .•
Many high quality tea plants grow at elevations up to 1.500 metres (5,000 feet), as the plants grow more slowly and acquire a better flavor.•
In its native state, it grows to a height of about 30 ft (9.1 m), but in cultivation it is pruned to 3-5 ft (91-152 em).•
Indonesian tea is usually grown on plantations manage by bigger estate or by small-holder farmers. Tea culture requires a protected, well- drained habitat in a warm climate with ample rainfall. The Tea Leaf
•
The lanceolate leaves are dark green; the blossom is cream-colored and fragrant.•
Only two leaf and abud are picked because leaves being those near the growing tip themost desirable. The leaves are picked by hand principally during flushes (periods of active growth). These buds and leaves are called flushes, and a plant will grow a new flush every seven to ten days during the growing season .

Tea Classification and Type
In tea world's, tea is traditionally classified based on producing technique especially on the fermentation process. Today Indonesian tea producers are offering the black tea, green tea, Oolong tea, and specialty tea. The tea is presenting in loose dried leaves, in tea-bag or in the form of instant tea.

Black teas are graded according to the size of the leaf; orange pekoe describes leaves that are smaller than the medium-size coarser pekoe leaves. Although black tea flavors vary, most are more assertive than those of green or oolong teas. Among the more well-known black teas are darjeeling, english breakfast and lapsang souchong .•

Green Tea
•
Slow 400-500 cup/kg
Express 800-1000 cup/kg
Green tea, favored among Asians, is produced from leaves that are steamed and dried but not fermented. The oxidation process is just stopped after a minimal amount of oxidation by application of heat, either with steam, or by dry cooking in hot pans
•
Such leaves produce a greenish-yellow tea and a flavor that's slightly bitter and closer to the taste of the fresh leaf.•
!Scientific studies have shown that both black and green teas increase the body's antioxidant activity by up to about 45 percent. They are also said to have antibacterial powers against cavities and gum disease .•
Processing system of green teaGreen tea is a leaf bud of tea plant that doesn't through fermentation processing. Processing system of green tea has several steps namely:
-Withered, by roll rotary panner, (80-1 00°C) -Cooling
-Scrolling leaf, 30 minutes -Drying, water content 4-6%
-Dry grading
OolongTea
•
Oolong tea is produced from leaves that are partially fermented (oxidized), a process that creates teas with a flavor, color and aroma that falls between black tea and green tea. It follows the same process as black tea, but the oxidization period is cut down to half the time, about 1-2 hours, before it is fired or dried•
Oxidation of picked leaves is stopped somewhere between the standards for green tea and black tea. The oxidation process takes two to three days.Indonesian Tea Catalogue

Indonesian Tea CatalogueTea Preparation and Serving Habits
•
The traditional method of making a cup of tea is with loose tea placed either directly, or in a tea infuser, into a tea pot and pouring boiling (or very hot depending on the type of tea) water over the tea.•
In the second half of the 20th century the use of teabags has largely supplanted the use of loose tea in the Western world; this has enabled brewing directly in a cup or mug.•
Historically in China, tea is divided into a number of infusions. The first infusion is immediately poured out to wash the tea, and then the second and further infusions are drunk. The third through fifth are nearly always considered the best infusions of tea, although different teas open up differently and may require more infusions of boiling water to bring them to life .Typically, the best temperature for
•
brewing tea can be determined by its type. Teas that have little or no oxidation period, such as a green or white tea, are best brewed at lower temperatures around 80°(, while teas with longer oxidation periods should be brewed at highertemperatures around 1oooc.
Black Tea
•
Black Tea. The water for black teas should be added at the boiling point (1oooc
or 212°F),except for more delicate teas, where lower temperatures are recommended. This will have as large an effect on the final flavor as the type of tea used.
•
The most common fault when making black tea is to use water at too low temperature. Since boiling point drops with increasing altitude, this makes it difficult to brew black tea properly in mountainous areas. It is also recommended that the teapot be warmed before preparing tea, easily done by adding a small amount of boiling water to the pot, swirling briefly, before discarding.•
Black tea should not be allowed to steep for less than 30 seconds or more than about five minutes (a process known as brewing or [dialectally]mashing in the UK, Specifically in Yorkshire.).

OolongTea
•
Oolong tea. Oolong teas should be brewed around 90°( to 1ooo c
(194°F to 212°F), and again the brewing vessel should be warmed before pouring in the water. Clay teapots are the ideal brewing vessel for oolong tea. For best results use spring water, as the minerals in spring water tend to bring out more flavor in the tea.1 0

Green tea. Water for green tea, according to most accounts, should be aroundsoo c
to 85°((176°F to 185°F); the higher the quality of the leaves, the lower the temperature. Hotter water will burn green-tea leaves, producing a bitter taste. Preferably, the container in which the tea is steeped, the mug, or teapot should also be warmed beforehand so that the tea does not immediately cool down.
Jasmine Tea
•
Jasmine tea is a traditional tea mostly liked by nearly all of tea addicts. The reason is that this old fashioned tea offers many benefits for health and has a very unique taste. Jasmine tea is made by mixing tea leaves and jasmine buds ready to bloom. Prior to mixing, the tea leaves should be moistened first so that the fragrance of jasmine can attach on the tea leaves .•
The serving suggestion of jasmine tea is by pouring boiling water into an empty teapot. Let it cool a bit for at least two or three minutes.Thereafter, add jasmine flower tea bit by bit into the water. After a while, you will be able to see an elegant transformation of jasmine flower tea forming beautiful flower arrangement. Now you can drink the jasmine flower tea or serve it to your guest. The taste of the tea will still linger even if you leave it for some time.Jasmine tea is a highly aromatic variety of tea which is flavored with jasmine flowers. In addition to providing a rich floral scent, the flowers add a subtle note to the tea which many people find quite enjoyable.
Jasmine Tea
•
Depending on the varietal, jasmine tea may be made with green tea or oolong tea. Oolong jasmine is very common, with a rich, mild flavor which also tends to settle the stomach Some times, jasmine flowers are left in the tea. This function is purely ornamental, as the flowers are essentially odorless and flavorless after the curing process is over.•
To make jasmine tea, jasmine flowers are harvested at the peak of their blooming and then they are cured with finished teas in conditions with carefully controlled humidity and temperature. As the jasmine flowers dry out, they infuse the tea with their flavor;Honey Tea
•
Honey tea is a combination ofjasminetea or green tea with honey. The honey is useful to maintain body immunity. This beverage may be a more natural and healthier alternative supplement to substitute artificial supplement. A study once conducted on liquid medium using tea and honey extract has proven that it can decrease the amount of Listeria monocytogenes and E.coli 0157:H7. Listeria is a malignant bacterium usually found in raw milk, ice cream, soft cheese, and raw or smoked fish meat. In liquid medium, the component interacts easily with organism.

Serving honey tea is simple. First of all prepare a warm tea in a cup and then infuse honey into the tea. The honey will work as natural sweetenerHoney Tea

as it is composed of glucose and fructose sugar, which are very useful as energy source to increase one's spirit and performance and also eliminate fatigue. If you like, add a slice of peeled ginger to give a warm and fresh sensation to the tea .
•
Sugar is fine for adding a sweet touch to either tea or coffee, but honey adds sweetness and a unique flavour that will change your whole cup. There are many different kinds of honey if you look around.
•
Honey has been used as a food or sweetener since the beginning of time. The ancient Aztecs and Romans traded in honey as well. Honey is produced by bees, who make it from nectar gathered from flowers to feed their young larvae.•
Many people use honey to naturally sweeten tea in replacement of table sugar due to its associated health benefits. A good source of carbohydrates, natural honey sweetens with no additives or preservatives. Because of its composition, pure honey has a lesser effect on glucose and insulin levels. Both tea and honey are known to contain antioxidants, which help prevent damage to cells and tissues that contribute to diseases like cancerGinger Tea

It is almost ascertained that everybody has ever tasted tea; either blend the ingredients by themselves or buy the tea in assorted flavors in a ready to serve packaging. What about ginger121 Indonesian Tea Catalogue
tea? There may not be many people have ever tried it, whereas this beverage is perfect to be enjoyed during rainy days. Ginger tea also gives comfort when we are not in good shape, having flatulent stomach, or queasy.
•
It is easy to serve ginger tea. The ingredients needed are tea, hot water, sugar and of course ginger. Steep the tea in a hot water. Add sugar sufficiently (just as serving regular hot tea). Then put in contused ginger (some people prefer to roast ginger prior). A little cinnamon powder may be added if you like.•
Ginger is a calming and soothing flavour with a touch of a bite to it that helps to keep you alert and calm. Ginger is commonly used to help an upset stomach, motion or travel sickness or general low-grade fevers. It is also excellent for nausea and for warming you up when you feel cold. Ginger is reputed to help ward off coldsor improve your recovery time. Tea is the most gentle form of consuming ginger .
•
If used as a tisane for a cold, nausea or low-grade fever, be sure to keep an eye on your temperature and general feeling of well-being. See a doctor or other professional if your fever does not improve or if you continue feeling unwell. Do not take ginger if you have a high fever, an inflammatory skin complaint, ulcers or gallstones.Ginger is safe to consume in small amounts during pregnancy to alleviate morning sickness but you should consult your doctor first.
