Penelitian ini bertujuan untuk mengkaji atribut produk dangke yang menjadi preferensi atau selera konsumen di Desa Cendana Kecamatan Cendana Kabupaten Enrekang dan mengkaji atribut yang paling dipertimbangkan konsumen dalam keputusan pembelian produk dangke di Desa Cendana Kecamatan Cendana Kabupaten Enrekang.

Metode Penentuan sampel dalam penelitian ini menggunakan teknik accidental sampling (teknik sampling kebetulan). Accidental sampling (teknik sampling kebetulan) dengan jumlah responden sebanyak 50 orang. Jenis data yang digunakan adalah data primer dan sekunder. Analisis yang digunakan adalah analisis chi square. Hasil analisis chisquare menunjukkan bahwa seluruh variabel produk dangke berbeda nyata. Artinya preferensi konsumen terhadap produk dangke di Desa Cendana Kecamatan Cendana Kabupaten Enrekang tidak sama sama atau terdapat perbedaan preferensi konsumen terhadap produk dangke.

Dari Hasil Penelitian Produk Dangke yang menjadi preferensi konsumen di Desa Cendana Kecamatan Cendana Kabupaten Enrekang adalah dangke yang mempunyai atribut rasa yang gurih, aroma yang khas susu sapi, tekstur yang kasar, harga yang terjangkau serta kemasan yang melindungi dari debu.

ANNISA PEBRIANTY.105961104618. Analysis of Costumers Preferences for Processed Beef Dangke Products in Cendana Village, Cendana District, Enrekang Regency.

This study aims to examine the attributes of dangke products that become consumer preferences or tastes in Cendana Village, Cendana District, Enrekang Regency and examine the attributes that are most considered by consumers in the decision to load dangke products in Cendana Village, Cendana District, Enrekang Regency.

Methods The determinationof the sample in this study used accidental sampling technique (a coincidence sampling technique). Accident sampling with the number of respondents as many as 50 people. The types of data used are primary and secondary data. The analysis used was chi square analisys. The result of the chi-square analysis showed that all off the dangke product variables were significantly different. This means that consumer preferences for dangke products in Cendana Village, Cendana District, Enrekang Regency are not the same or there are differences in consumer preferences for dangke products.

From the results of the research, Dangke products that are consumer prefences in Cendana Village, Cendana District, Enrekang Regency are dangke which have savory taste attributes, a distinctive aroma of cows milk, rough texture, affordable prices and packaging that protects from dust.
