Abstract

The general relationship between farmers and small scale feed mills need to be carried out continuosly and improved for the sustainability of the chicken layer business, analysing the influence of economic, social, and feed quality on satisfaction, trust, and commitmen. This research was aimed to examine the general purpose of this constructing interrelationship development model of farmers with small scale feed mill. The research was designed using interview and observation interrelationship development. Descripitve and statistical analysis (path analysis with Tetrad IV) were analyzed. The results showed interrelationship development model between farmer and smalla scale feed mill was taken social factor determined significatly to trust, feed quality factor determined significantly commitment, both trust and commitment determined significantly to interrelationship between farmer and small scale feed mill. ©

PREFACE

International Conference of Animal Science and Technology (ICAST) 2018 was held in Makassar, Indonesia on November 6 – 7

th

2018 hosted by Faculty of Animal Science Hasanuddin University. ICAST 2018 held with purpose to encourage the importance of local Indonesian livestock in an international event. Furthermore, the livestock sub-sector could be used as a supporting for regional and national economies.

So that it will improve the welfare of Indonesian smallholder farmers. Animal Science Faculty of Hasanuddin University is as one of the higher institution in academic and research in livestock business that contributing in innovation, knowledge and technology of animal science. This conference hopefully contributes to develop the proven technology that appropriate with the tropical environment as well as an indigenous technology and improved technology using local wisdom.

The aim of the conference were to support animal production in tropical countries, harmonize the synergy among Academics, Business, and Governments, create international researcher networking in animal science and improve international collaboration research and publication. Professors from Egypt, Malaysia, Thailand, and Philippines were invited to deliver keynote speeches, together with invited speakers from Indonesian Universities. Their presence indicates the concern and role of the researchers, scientists and practitioners in animal production, nutrition, social- economic and animal product technology.

We would like to appreciate all authors who have contributed to this proceedings, the conference committee, speakers, attendees, organizing committee and sponsors who support the 1

ICAST 2018. Hopefully this conference proceeding contributes in innovation knowledge and technology of animal science in tropical environment.

Abstract

Exopolysaccharide (EPS) is an extracellular slime polysaccharide from bacteria and one of EPS produced by Alcaligenesfaecalis var. myxogenes strain 10C3 which found by Harada for the first time in 1965. In this study, it was used Lactobacillus delbrueckii subsp. bulgaricus B-5b, which obtained from Japan Milk Product Technology Association, Tokyo, Japan. During the course of the investigation, the culture was routinely propagated in 10% RSM. The RSM was added with 0, 0.5 and 1% of EPS, autoclaved at 121°C for 15 min and tempered to 37°C prior to inoculation. A 0,1%

inoculum was added to the RSM and the culture was allowed to incubate at 37°C overnight. Milk curd investigated toward growth curve of cell bacteria numbers, pH, acidity, viscosity, rheometric properties. Abstract

Yam tuber is quite abundant in Indonesia and has high carbohydrate and has inulin content. Tuber yam has not been widely used as an ingredient of biomilk synbiotic or yoghurt products. This study aimed to investigate the effects addition of yam Tuber (Dioscorea alata) flour as a source of

prebiotic, on physicochemical and microbial characteristics of biomilk synbiotic. Starter culture on biomilk process using Streptococcus thermophillus and Lactobacillus bulgaricus as probiotic bacteria used Lactobacillus rhamnosus. Abstract

The aim of the study was to evaluate effect of zonation in closed house on ammonia emission, immune system and broiler chicken performance in the dry season. A total of 720 unsexed broilers were subjected into 4 treatment : zone 1, zone 2, zone 3, and zone 4 (at 0, ¼, ½, and ¾ the length of closed house from inlet). Ammonia emissions, relative weights of thymus, spleen and bursa

fabricius, neutrophil, lymphocyte levels, and N/L ratio broilers were measured. Performance index parameters were also observed to illustrate the impact of zoning on broiler performance. Abstract

The use of smoked flour in Balinese beef meatballs and fresh meat was expected to be able to work more effectively in preservation compared to the use of liquid smoke. Loss of liquid smoke

compounds in the form of evaporation during the preservation and storage process resulted in a lack of maximum performance of liquid smoke as a preservative and aroma of smoke. This study aimed to see changes in smoke compounds during storage in fresh Bali beef meat and meatballs. Smoke was used in the form of smoke flour resulting from oven drying, freeze drying and spray drying.

This research was carried out using 6 head of 3-year-old male Bali cattle, Longissimus dorsi (LD) muscle.
