1. Nguyen lieu:
Co sira kho dat mua tai tinh Binh Duong. Sau khi thu mua, sang say iam sach va dong goi bao quan noi kho rao cho den khi dua vao xay. Tieu chuan; do kho dudi 7% va khdng lan tap chat.

3.1. Lya chpn cong thirc tra co siia:
Do dac diem cam quan ciia tra co siia la CO vi chat nhe, mau nudc vang nhat dye, chinh vi vay, chiing toi chpn them cac nguyen lieu co ciing tac dung sinh hpc de dua vao thanh phan xay dung cong thiic tra co sGa. Cac cong thirc de khao sat lua chpn trong NC nay nhu sau:
Cong Ihuc 1 (CTI); thanh phan gom 100%cdsira
Cong thtic 2 (CT2); thanh phan gom 90% CO sua
Cong thtic 3 (CT3): thanh phan gom 80% CO sua
Cong thirc 4 (CT4): thanh phan gom 70% CO sira
3.2.San xuat tra co sua:
Co sua kho, co ngpt kho, nu Voi kho sau khi dugc chgn lya, sang say, cho say kho tai nhiet do 60''C trong 30 phiit. Sir dung may cat nghien, dieu chinh dp md cua 2 ludi dao de xay thanh theo dang nhd hat vdi kich thudc <0,1 mm.
Cac nguyen lieu dugc trpn deu theo ly Ie ciia cong thiic, sau do dong goi dang tui Ipc, moi tili chiia 2g. Tien hanh dong hop vdi so lugng 20 goi/hpp. Cac hop thiet ke so bp ve nhan mac. dua cac thong tin ve san pham: ten san pham, cong dyng, lieu lugng, each dimg, bao quan, noi san xuat, ngay thang san xuat va han sir dung.

3.4. Xac dinh ham lugng Polyphenol cac mau Irii se dugc de trong chai/Ig kin CO dan nhan, so hipu, diing de xac dinh nong do Polyphenol. Ngoai ra mgt sd mau sc dugc bao quan trong tii lanh (nhiet dp lir 2-8''C) trong thdi gian tir 1, 2, 3 ngay, sau do kiem tra sy thay ddi n6ng dp polyphenol. Phuong phap xac dinh nong dp Polyphenol theo phuong phap so mau cua Folin- Ciocalleau, torn tat nhu sau: Cho dinh lugng nong dp polyphenol vao ong nghiem 50yl nudc tra CO sua, hoac dung dich chuan (cale- chin), sau do cho vao 250pl dung dich Folin va 750pl dung djch Na2CO3l0%
va 3ml nudc cat. Lac deu dng nghiem bang may Votex, de tai nhiet dp phong, tranh anh sang trong 2 gid. Do dung djch bang may quang pho lai budc song 765nm. Tinh loan ham lugng polyphenol dua theo dudng chuan cua catechin de tinh lugng catechin (mg) trong 1 ml nudc tra cd sira hoac trong 1 g tra co sira.
3.5. Danh gia cum quan trong phong thi nghiem
Tien hanh danh gia cam quan nudc tra CO siia theo 4 cong thirc va 2 kieu pha che bang phep thii cho diem chat lugng tdng hgp (TCVN 3215-79). Hgi d6ng thir g6m 7 thanh vien dugc lua chgn va tap hudn.
Hpi dong cho diem theo thang 6 bac 5 diem (0 diem img vdi san pham bj hdng, con tir 1 den 5 diem iing vdi miic khuyet tat giam dan) Iren cac tinh chat ciia tra cd sira la mau nudc, miii va vi. Cac so lieu phan tich cam quan, tinh chap nhan va ham lugng polyphenol dugc lam sach va nhap sd lieu bang chuang trinh EPI-INFO 6.0. Xu ly s6 lieu bang phan mim SPSS 16.0.

sira) cd tdng diim chat Iugng cam quan cao nhat trong s6 4 cong thirc (12,4 diim khi ham trong 10 phiit va 12,6 khi dun d 30 phut). CTI (100% cd sira) cd t6ng diim chat lugng cam quan cung nhu ham lugng pholyphenol trong nudc tra thap nhat. Khi ham 10 phiit, thi ham lugng polyphenol ciia C'r2 khong bang CT3 va CT4, nhung khi dun soi 30 phiit, thi ham lugng polyphenol ciia CT2 cung co ket qua gkn bang CT3 va CT4. Trong ca 2 dieu kien pha che la ham va dun soi, thi CT3 va CT4 lai co mau nudc toi sam, vi hoi dang va khong ro mui co siia, diem cam quan thap hon so vdi CT2. Chinh vi vay chiing toi quyet djnh lya chpn CT2 la cong thiic CO chat lugng chung tot nhat de san xuat thir nghiem tra liii lpc co siia.
Trong nghien ciiu nay, danh gia chat lugng cua 4 cong thirc tra co sii'a vdi 2 kieu pha che da cho thay each dun sol trong 30 phiit da giiip tra co siia dang hat nho chiet tach dugc ham lugng polyphe- nol toi uu nhat, nhieu han so vdi each bam nudc soi. Polyphenol la mpt trong cac thanh phan hoat tinh ciia thyc vat, dugc xem la ihanh phan quan trgng trong khau phan va trong phong cac benh vdi rat nhieu lac dung sinh hgc. Polyphenol chiet tach tir co sii'a co hoat tinh la dgn dep cac goc ty do va phan lu tu do, tac dyng nay da dugc chiing minh tren dng
nghi?m [II]. Hon niia, polyphenol trong cd siia dugc chiing minh cd kha nang kiim soat tang dudng huyet, gdp phan giam cac biin chirng ciia benh dai thao dudng [II]. 2.Ket qua ve su* chap nhan cua cpng dong
Bang 4 cho thay ve sy chap nhan cua cgng ddng doi vdi san pham tra cd siia, 88,2% ngudi thir cam quan deu thich mau nudc tra cd sira, 89,2% thich va rat thich mill, 75,5% thich va rat thich vi cua tra co siia. Da sd ngudi Ihu thich mau nudc va miii cua tra co sira vdi ty Ie cpng ddn tir thich den rat thich ciia 2 tinh chat nay la 88,2% va 89,2%. Trong khi dd s6 ngudi thich va rat thich vi ciia tra co siia thap hon (75,5%), nhung ciing chi co 1% so ngudi thu khdng thich vi tra co siia. V. KET LUAN
1. Ham Iugng polyphenol chiet tach tir tra CO sira (90% co siia) da cho diem cam quan cao nhat va cho ham Iugng polyphe- nol cao khi dun sdi 30 phut (1,2 mg cale- chin/ml tra hoac tuong duang 31,2 mg calechin/g tra co siia).
2. Co 84,3% ngudi thir thich va rat thich mau, miii va vi ciia tra cd sira pha che theo each dun soi trong 30 phiit.

ASSESSMENT OF POLYPHENOL CONTENT AND THE ACCEPTABILITY OF CO SUA TEA BY FORMULAS AND MAKING STYLES
Co Sua (Euphorbia hirta L.) tea was produced in 4 different formulas and packaged as 2 grams per sachet. Co Sua tea was made by boiling for 30 min or stewing in hot water for 10 min.
Polyphenol content in the Co Sua tea was determined and hedonic test was conducted. Results showed that polyphenol content in the boiled Co Sua tea was higher than the Co Sua tea which was stewed. Co Sua tea that was produced in fomiula 2 (90% Co Sua) had the highest acceptability in terms of color, smell, and taste (>84.3%).
