PEMBUATAN DAN KARAKTERISASI EDIBLE F ILM DARI VARIASI PATI SUKUN (Artocarpus altilis) DAN KITOSAN MENGGUNAKAN

Edible Film sebagai alternatif pengganti bahan kemasan yang ramah lingkungan karena sifatnya yang biodegradable dan dapat dimakan, dengan keunggulan tidak beracun, tidak menyebabkan polusi, dan memiliki sifat penghambat transfer massa (uap air, oksigen, dan zat terlarut) dan harganya murah. Edible film dari pencampuran pati sukun (artocarpus altilis) dan kitosan dengan variasi jumlah 1:1; 1:2; dan 1:3 dengan total campuran 4 gram dalam 100 ml larutan menggunakan plastisizer gliserol 1,2 ml, kemudian dikeringkan di oven pada suhu 450C selama 48 jam. Diperoleh Edible film yang memiliki karakteristik sebagai
berikut : Nilai kuat tarik diperoleh untuk edible film 1:1 = 7,7 Mpa dan % kemuluran 10,06 %; 1:2 = 3,2 Mpa dan nilai % kemuluran 14,22 % serta 1:3 2,3 Mpa dan nilai % kemuluran 22,32 %. Tebal film diperoleh 0,12 - 0,15 mm. Morfologi permukaan edible film kurang homogen. Analisa Termal menunjukkan bahwa pada suhu 313 0C edible film mengalami dekomposisi. Analisa FT-IR menunjukkan bahwa pada edible film hanya terjadi interaksi fisika saja. Analisa WVTR menunjukkan bahwa edible film perbandingan 1:2 mempunyai sifat menghambat uap air terbesar dengan nilai 0,1773 Kg/m2/Jam. Analisis aktivitas antimikroba diperoleh bahwa edible film 1:1 mempunyai daya hambat terbesar terhadap bakteri S.Aureus maupun E.Coli. Serta Uji sifat mengembang menunjukkan edible film 1:2 mempunyai sifat lebih tahan terhadap kelarutan dalam air.

ABSTRACT
Edible Film as an alternative to environmentally friendly packaging material because it is biodegradable and can be eaten, with the advantages of non-toxic, does not cause pollution, and has a mass transfer barrier properties (water vapor, oxygen, and the solute) and the price is cheap. Edible films have been fabricated from mixing starch breadfruit (Artocarpus altilis) and chitosan with variations in the amount of 1: 1; 1: 2; and 1: 3 with a total mixture of 4 g in 100 ml of solution using 1.2 ml glycerol as plasticizer, then dried in an oven at 45 0C for 48 hours. Retrieved Edible films that have the following characteristics: tensile strength value obtained for the edible film 1: 1 = 7.7 MPa and % elongation 10.06%; 1: 2 = 3.2 MPa and % elongation values 14.22 % and 1: 3 2.3 MPa and % elongation values 22.32%. Thick film was obtained
from 0.12 to 0.15 mm. Edible film surface morphology is less homogeneous. Thermal analysis showed that at a temperature of 3130 C edible film to decompose. FT-IR analysis showed that the edible film occurs physical interaction only. Analysis showed that the edible film WVTR ratio 1: 2 has the largest water vapor inhibiting properties with a value of 0.1773 kg / m2 / hour. Analysis showed that the antimicrobial activity of edible film 1: 1 has the greatest inhibition of S. aureus and E. coli against bacteria. And test properties of edible film Swelling showed 1: 2 has properties more resistant to water solubility.
