SUMMARY

Acetic acid bacteria is very important role in the cocoa fennentation. They oxidize ettianol, which was produced by tlie yeast, to produce-acetic acid. In the cocoa fennentation, acid acetic aad temperature (which formed by biocheimcal-reaca.on)Jdll germ and break the wall cells, which make flie ways of chemical compounds to contact together and change flie color and quality of cocoa beans. Fennentation of cocoa beans is the first and most impoitant stage to make the piescusor flavor, color and texture characteristics of cocoa beans in chocolate processing. Isolation and identification of some species of accehc bacteria are the first stage of researching the produce of cocoa flavor and quality and to complete the cocoa fennentation process for increasing and stable cocoa jjuality. Morphological charactenstics and sequence analysis of 16S rRNA genes mefliods were used in this study. The results show fliat the number ofCFU from 1.8 x 10''to 7.2 x lO'CFU/gfiesh cocoa bean. 7 different forms of bacteria were isolated and"

identified by iCS rBNA and which are similarities in Acetobaters of Genbank at 99-100%, including Acetobacter tropicalis,

Acetobacter pasteurianus,A cetobacter indoneslensis.
