Kadar alkohol yang dihasilkan dari proses pembuatan alkohol dari ampas ubi kayu dipengaruhi oleh dua faktor, yaitu faktor konsentrasi ragi instan yang digunakan dan lamanya waktu fermentasi. Berdasarkan analisis varians dengan menggunakan taraf signifikansi sebesar 5%, diperoleh hasil bahwa kedua faktor tersebut memberikan efek yang signifikan terhadap kadar alkohol yang dihasilkan tersebut. Metode response surface terdiri dari dua rancangan eksperimen, yaitu model orde pertama dan model orde kedua. Model orde pertama merupakan tahap penyaringan (screening), sedangkan model orde kedua merupakan tahap optimasi. Persamaan response surface yang digunakan untuk menggambarkan hubungan antara faktor-faktor yang dikoding dengan variabel respon adalah :

Berdasarkan model tersebut, maka diperoleh taraf pada masing-masing faktor yang menghasilkan kadar alkohol yang maksimum dalam proses pembuatan alkohol dari ampas ubi kayu, yaitu sebanyak 14.2367% konsentrasi ragi instan yang digunakan, dan lamanya waktu fermentasi yang digunakan adalah selama 111.7324 jam.

Levels of alcohol produced from the process of making alcohol from cassava pulp is influenced by two factors, factors that are used instant yeast concentration and duration sof fermentation. Based on the analysis of variance using a significance level of 5%, obtained the result that both these factors provide a significant effect on levels of alcohol are produced. Response surface method consists of two design experiments, the model of first order and second-order models. First-order model of a screening phase (screening), while the second-order model of the optimization stage. Based on these models, the level obtained in each of the factors that produce the maximum alcohol content in the process of making alcohol from cassava pulp, which is about 14.2367% used instant yeast concentration, and duration of fermentation that is used is 111.7324 hours.
