Khao sat nay nliim danh gia mile do nhiim E.coli, Salmonella va ton du mot sd Idiang sinh tren thit Ion, thit ga tai cac co so gik m6 (CSGM) va co so l<inh doanh (CSKD) thuoc 4 tinh An Giang, Vinh Loiig, D6ng Thap va C&n Tho. Kit qua xet nghiem cho thiy doi voi thit Ion tai co so giet m6, ty le nhiSm E.coli la 38,89% va Salmonella la 14,44%, tai co so kmh doanh, ty le thit lgn nhiim E.coli la 11,11% va Salmonella la 21,li%. D6i vol thit ga tai co so giit m6, ty le nhiim E.coli la 20% va Salmonella la 15%, tai co so icinh doanh, ty le tMt ga nhiim E.coli la 62,5% va Salmonella la 37,5%. Ket qua idiao sat ton du khang sinh tren 54 mlu thit Ion va 24 mlu thh ga cho thiy Enrofloxacine vugt muc cho phep 6 thit Ion la 2/44 miu (3,7%) va o thit ga la 2/24 miu (8,33%).

SUMMARY
The objective of this survey aimed at assessing the level of E.coli, Salmonella contamination and residues of some antibiotics in pork, chicken meat at the slaughterhouses and business establishments in 4 provinces of An Giang, Vinh Long, Dong Thap and Can Tho. The surveyed results showed that at the slaughterhouses, the rate of pork contaminating with E.coli was 38.89% and with Salmonella was 14.44%; in the business establishments, the rate of pork contaminating with E.coli v^as 1 1 . 1 1 % and with Salmonella was 27 7 8 % . At the slaughterhouses, the rate of chicken meat contaminating with E.coli was 2 0 % and with Salmonella ^N as 15%, while atthe business establishments, the rate of chicken meat contaminating with E. co//was 62.5%
and with Salmonella was 37.5%. The surveyed results on antibiotic residues from 54 samples of pork and 24 samples of chicken meat showed that enrofloxacine exceeded the permitted level in pork was 2/44 samples (3.7%) and in chicken meat was 2/24 samples (8.33%)

Xuat phat tir thuc tien tren, van de kiem tra, danh gia va giam sat thirc trang nhiem vi khuan va ton du khang sinh tren thuc pham, cu the la thit lgn va thit ga tir ca so giet mo den ca sa kinh doanh phai dugc thuc hien thuang xuyen. Do do, viec khao sat ty Ie nhiem vi khuan va ton du khang smh tren thit lgn va thit ga tai mgt so tinh mien Tay Nam Bg nham co cai nhin tong quan ve thuc trang, ddng thai la co sd dua ra cac giai pbap khac phuc teong thai gian tai.
II. NOI DUNG VA PHlTONG PHAP NGHIEN ClTu
2.1. Noi dung nghien cmi
- Phan tich, xac djnh, danh gia cac chi tieu E.coli va Salmonella tren thit lgn.
- Phan tich xac dinb, danh gia cac chi neu E. call va Salmonella tren thit ga.
- Phan tich xac dinh, danh gia tdn du mgt so khang sinh tren thit Ign, thit ga.
2.2. Vat lieu
- Cac mSu thit Ign va thjt ga dugc thu thap tu CO sa gi^t m6, ca sa kinh doanh ciia 4 tinh An Giang, Vtnb Long, D6ng Thap va Can Tha.
- Dia dilm phan tich xet nghiem: Trung tam Kiem tra ve sinh thii y Trung uong IL - Thai gian thuc hien: tii ngay 1/5/2018 den ngay 30/11/2018.
2.3. Phucmg phap nghien cihi 2.3.1. Phirffng phdp lay mau
- Lay mau tai ca sa giet mo va ca so kinh doanh de xac dinh vi khuan gay 6 nhiem.
- Liy mlu theo QCVN 01-04:2009/BNNPrNT Quy chuan ky thuat quoc gia lay va bao quan mau thit tuai tu cac ca sa giet mo va kinh doanh thit de kiem tra vi sinh vat.
- Giai ban cho phep cua E. coli va Sahnonella theo QCVN 8-3:20I2/BYT.
- Giai ban cho phep khang sinh ton du theo Thong tu s6 10/2016/TT-BNNPTNT va Thong tus6 24/2013/TT-BYT.

Nbu vay, ket qua khao sat ghi nhan.
