StJMMARY

Lactase enzyme has many important appiicatioDs in daiiy industry. For &e next step lo obtain lactase in industrial scale, the production of lactase by Lactobacillus delbrueckii ssp delbrueckii was stndied. The present study was conducted to identify conditions for the highest activity of lactase enzyme fiom Lactobacillus delbruecldi ssp delbrueckii by using response surface methodology (RSM). The highest lactase aclivi^ was obtained by using glucose as carbon source. RSM was used to investigate the effects of three fermentation parameters (temperature, inital pH and inoculation rate) on p-galactosidase enzyme production Maximuni specific enzyme activity of 64829 U/g was obtained at tlie optimum levels of process variables (34.6'' C, pH 6.23, inoculation rale 16%) Results of the statistical analysis showed that the fit of the model was good in all cases (about 95%).
