AZHAR USNI. Pengaruh Edible Coating Berbasis Pati Kulit Ubi Kayu terhadap Kualitas dan Umur Simpan Buah Jambu Biji Merah pada Suhu Kamar, dibimbing oleh Terip Karo-Karo dan Era Yusraini.
Penelitian ini dilakukan untuk mengetahui pengaruh edible coating berbasis pati kulit ubi kayu terhadap kualitas dan umur simpan buah jambu biji merah pada suhu kamar. Penelitian ini terdiri atas tiga tahap. Tahap I meliputi karakterisasi edible film yang bertujuan untuk menentukan formulasi edible film yang terbaik dengan dua faktor yaitu konsentrasi CMC (0,5%, 1,0%, 1,5%, dan 2,0%) dan konsentrasi gliserol (10% dan 20%). Adapun parameter yang dianalisis adalah viskositas, ketebalan, persen pemanjangan, laju transmisi uap air, dan nilai hedonik warna, tekstur, kejernihan dan keseluruhan. Tahap II meliputi pengaplikasian edible coating pada buah jambu biji merah dengan faktor lama penyimpanan selama 0, 2, 4, 6, 8, dan 10 hari. Adapun tahap III meliputi pengujian mutu buah jambu biji merah dengan perlakuan edible coating pada umur simpan terbaik dibandingkan dengan kontrol. Parameter yang dianalisis adalah susut bobot, kadar air, kekerasan, kadar vitamin C, total asam, total padatan terlarut, nilai skor warna, nilai hedonik warna, aroma, rasa, dan tekstur.
Hasil penelitian pada tahap I menunjukkan bahwa formula edible film yang terpilih adalah CMC 1,5% dan gliserol 10%. Hasil akhir penelitian menunjukkan bahwa aplikasi edible coating terhadap buah jambu biji merah selama penyimpanan memberikan pengaruh berbeda sangat nyata (P<0,01) terhadap semua parameter mutu. Akan tetapi, aplikasi edible coating pada buah jambu biji merah memiliki kualitas yang lebih baik dibandingkan kontrol pada umur simpan 6 hari.

AZHAR USNI. The Effect of Edible Coating Based on Starch of Cassava Pell on The Quality and Shelf Life of Guava fruits at Room Temperature, supervised by Terip Karo-Karo and Era Yusraini.
The aim of this research was to find the effect of edible coating based on starch of cassava pell on the quality and shelf life of guava fruits at room temperature. This research consisted of three steps, i.e.: Step I was characterization of edible film, to decide the best formulation of edible film with two factors, i.e.: the concentration of CMC (0,5%, 1,0%, 1,5%, and 2,0%) and the concentration of glycerol (10% and 20%). Parameters analyzed were viscosity, thickness, elongation percentage, water vapor transmission rate, and hedonic value of color, texture, brightness, and overall. Step II was application of edible coating on guava fruits with storage time as single factor i.e. 0, 2, 4, 6, 8, and 10 days. Step III was testing quality of guava fruits with edible coating treatment at the best shelf life compared with control. Parameters analyzed were weight loss, water content, hardness, level of vitamine C, total acid, total soluble solid, color score value, hedonic value of color, flavor, taste, and texture.
The results at step I showed that the formulation of edible film was chosen contained CMC 1,5% and glycerol 10%. The final results showed that the application of edible coating on guava fruits during storage time had highly significant effect (P<0,01) on all parameters. The application of edible coating on guava fruits at storage time for 6 days had better quality than control.
