POSSIBLE APPUCATIONS O F ENZYMES AT MUCILAGE - LAYER REMOVING STAGE D4 COFFEE WET PROCESSING TECHNOLOGY

The research was carried out during coffee harvest crops 2009/10 and 2010/11 in Buon Ma Thuot.
Vietnam. Five enzyme preparations, covering Lumipect-CP, Peelzym®, Rohapect® lOL Rohament®pulpex and Pectinex® Ultra SP-L were assessed its ability for removing mucilage layer on coffee parchment from pulped coffee cherries. The regjilt shown that enzyme preparation Rohapect® lOLis the best; and the most suitable usage dose of this enzyme preparation is 150 ppm for treatment of parchment coffee in a duration of two hours.
